Air Fryer Bacon Egg and Cheese

Ingredients
  

  • - 4 strips thin cut bacon
  • - 4 large eggs beaten
  • - 4 slices American cheese or cheddar
  • - 2 English muffins split and toasted
  • - 1 tbsp butter
  • - ½ tsp salt
  • - ½ tsp black pepper
  • - Fresh chives chopped for garnish

Method
 

  1. Preheat air fryer to 400°F (200°C) for 3 minutes
  2. Place bacon in air fryer basket in single layer
  3. Cook bacon for 8 minutes until perfectly crispy
  4. Remove bacon and drain on paper towels
  5. Place English muffin halves in air fryer at 375°F for 2-3 minutes until golden
  6. Meanwhile scramble eggs low and slow in butter with salt and pepper
  7. Layer scrambled eggs on bottom English muffin half
  8. Add crispy bacon broken in half on top of eggs
  9. Place cheese slice on top of bacon
  10. Return to air fryer at 350°F for 1 minute to melt cheese
  11. Top with second English muffin half
  12. Garnish with fresh chives and serve immediately
