Air Fryer Breakfast Burritos

Ingredients
  

  • - 4 large flour tortillas
  • - 6 large eggs beaten
  • - 6 strips bacon
  • - 1 cup shredded Mexican cheese blend
  • - ½ cup bell peppers diced
  • - ¼ cup red onion diced
  • - 1 tbsp butter
  • - 1 tsp cumin
  • - 1 tsp chili powder
  • - ½ tsp garlic powder
  • - ½ tsp salt
  • - ½ tsp black pepper
  • - Cooking spray
  • - Salsa for serving
  • - Sour cream for serving
  • - Fresh cilantro for garnish
  • - Lime wedges for serving

Method
 

  1. Preheat air fryer to 400°F (200°C) for 3 minutes
  2. Cook bacon in air fryer for 8 minutes until crispy
  3. Meanwhile cook bell peppers and onion in butter in skillet for 3 minutes
  4. Add beaten eggs cumin chili powder garlic powder salt and pepper
  5. Scramble eggs low and slow until just set
  6. Crumble cooked bacon and add to egg mixture
  7. Lay tortilla flat and add egg and bacon mixture in center
  8. Top with shredded cheese
  9. Fold sides in then roll tightly into burrito shape
  10. Spray all sides generously with cooking spray
  11. Place seam side down in air fryer basket
  12. Cook for 4 minutes then flip carefully
  13. Cook another 3-4 minutes until golden and crispy
  14. Serve with salsa sour cream and fresh cilantro
