Air Fryer Breakfast Tacos

Ingredients
  

  • - 8 small flour tortillas
  • - 6 large eggs beaten
  • - 6 strips bacon
  • - 1 cup shredded Mexican cheese blend
  • - 1 avocado diced
  • - ½ cup fresh salsa
  • - ¼ cup sour cream
  • - ¼ cup fresh cilantro chopped
  • - 2 limes cut into wedges
  • - 1 tbsp butter
  • - ½ tsp salt
  • - ½ tsp black pepper
  • - ½ tsp cumin
  • - Cooking spray

Method
 

  1. Preheat air fryer to 400°F (200°C) for 3 minutes
  2. Place bacon strips in single layer in air fryer basket
  3. Cook bacon for 8 minutes until crispy then set aside
  4. Meanwhile scramble eggs with butter salt pepper and cumin in skillet
  5. Warm tortillas in air fryer at 350°F for 2-3 minutes until crispy
  6. Crumble cooked bacon into pieces
  7. Fill each tortilla with scrambled eggs and crumbled bacon
  8. Top with shredded cheese while eggs are still hot
  9. Add diced avocado fresh salsa and sour cream
  10. Garnish with fresh cilantro and serve with lime wedges
