Air Fryer Chicken Quesadilla

Ingredients
  

  • - 2 large flour tortillas
  • - 1 cup cooked chicken breast shredded
  • - 1 cup shredded Mexican cheese blend
  • - ½ cup bell peppers diced
  • - ¼ cup red onion diced
  • - 1 tsp cumin
  • - 1 tsp chili powder
  • - ½ tsp garlic powder
  • - ½ tsp salt
  • - Cooking spray
  • - Sour cream for serving
  • - Guacamole for serving
  • - Salsa for serving

Method
 

  1. Preheat air fryer to 375°F (190°C) for 3 minutes
  2. Mix shredded chicken with cumin chili powder garlic powder and salt
  3. Lay one tortilla flat and spread chicken mixture evenly
  4. Add diced bell peppers and red onion
  5. Top with shredded cheese
  6. Place second tortilla on top and press firmly
  7. Spray both sides generously with cooking spray
  8. Place carefully in air fryer basket
  9. Cook for 5 minutes then flip carefully using a spatula
  10. Cook another 4-5 minutes until golden and crispy
  11. Remove and cut into triangles immediately
  12. Serve with sour cream guacamole and salsa
