Air Fryer Chicken Quesadilla Bowl

Ingredients
  

  • - 2 large boneless chicken breasts
  • - 2 large flour tortillas cut into strips
  • - 2 cups cooked white rice
  • - 1 cup shredded Mexican cheese blend
  • - ½ cup fresh salsa
  • - ¼ cup sour cream
  • - ¼ cup guacamole
  • - 2 tbsp olive oil
  • - 2 tsp fajita seasoning
  • - 1 tsp garlic powder
  • - ½ tsp salt
  • - ½ tsp black pepper
  • - Fresh cilantro for garnish
  • - Lime wedges for serving

Method
 

  1. Preheat air fryer to 400°F (200°C) for 3 minutes
  2. Brush chicken with olive oil and season with fajita seasoning garlic powder salt and pepper
  3. Place chicken in air fryer basket
  4. Cook for 10 minutes then flip
  5. Cook another 8-10 minutes until internal temperature reaches 165°F
  6. Remove chicken and rest for 3 minutes then slice into strips
  7. Cut tortillas into strips and place in air fryer basket
  8. Cook at 400°F for 4-5 minutes until shatteringly crispy
  9. Build bowls with rice as base
  10. Add sliced chicken and shredded cheese
  11. Top with salsa sour cream and guacamole
  12. Add crispy tortilla strips immediately before serving
  13. Garnish with fresh cilantro and serve with lime wedges
