Air Fryer Chocolate Lava Cake

Ingredients
  

  • - 4 oz dark chocolate 70% cocoa chopped
  • - ½ cup butter
  • - 2 large eggs
  • - 2 egg yolks
  • - ¼ cup sugar
  • - 2 tbsp all purpose flour
  • - 1 tsp vanilla extract
  • - Pinch of salt
  • - Softened butter for greasing ramekins
  • - Cocoa powder for dusting ramekins
For serving:
  • - Vanilla ice cream
  • - Fresh raspberries
  • - Powdered sugar for dusting

Method
 

  1. Grease 4 ramekins generously with softened butter
  2. Dust with cocoa powder and tap out excess
  3. Melt chocolate and butter together until completely smooth
  4. Cool for 5 minutes
  5. Whisk eggs egg yolks and sugar until pale and slightly thickened
  6. Pour chocolate mixture into egg mixture and whisk to combine
  7. Add flour vanilla and salt and fold gently until just combined
  8. Divide batter evenly between prepared ramekins
  9. Preheat air fryer to 375°F (190°C) for 3 minutes
  10. Place ramekins in air fryer basket
  11. Cook for exactly 10 minutes until edges are set
  12. Center should still jiggle slightly when shaken
  13. Let rest for 1 minute then run knife around edges
  14. Invert onto serving plates immediately
  15. Dust with powdered sugar and serve with vanilla ice cream and raspberries
