Combine water and butter in saucepan over medium heat
Bring to boil then add flour and salt all at once
Stir vigorously until dough pulls away from sides and forms a ball
Remove from heat and cool for 5 minutes
Add eggs one at a time beating well after each addition
Add vanilla extract and mix until smooth and glossy
Transfer dough to piping bag fitted with large star tip
Preheat air fryer to 375°F (190°C) for 3 minutes
Spray parchment paper with cooking spray
Pipe churros 4-5 inches long onto parchment
Place parchment in air fryer basket
Spray churros lightly with cooking spray
Cook for 5 minutes then flip carefully
Cook another 5 minutes until golden and crispy
Meanwhile heat cream and pour over chocolate chips
Stir until smooth then add butter and vanilla
Roll hot churros immediately in cinnamon sugar mixture
Serve with warm chocolate dipping sauce
