Remove lamb chops from fridge 30 minutes before cooking
Pat lamb chops completely dry with paper towels
Mix olive oil garlic rosemary thyme salt pepper and Dijon mustard
Coat lamb chops generously on both sides pressing herbs firmly
Preheat air fryer to 400°F (200°C) for 3 minutes
Place lamb chops in single layer in air fryer basket
Cook for 6 minutes then flip carefully
Cook another 6 minutes for medium rare
Meanwhile dissolve sugar in hot water for mint sauce
Mix mint leaves vinegar sugar water and salt
Check internal temperature reaches 145°F minimum
Remove and rest for 5 minutes before serving
Serve with mint sauce on the side
