Air Fryer Lamb Chops

Ingredients
  

  • - 8 lamb loin chops 1 inch thick
  • - 3 tbsp olive oil
  • - 4 cloves garlic minced
  • - 2 tbsp fresh rosemary chopped
  • - 1 tbsp fresh thyme chopped
  • - 1 tsp salt
  • - 1 tsp black pepper
  • - 1 tsp Dijon mustard
For mint sauce:
  • - ½ cup fresh mint leaves chopped
  • - 2 tbsp white wine vinegar
  • - 1 tbsp sugar
  • - 2 tbsp hot water
  • - Pinch of salt

Method
 

  1. Remove lamb chops from fridge 30 minutes before cooking
  2. Pat lamb chops completely dry with paper towels
  3. Mix olive oil garlic rosemary thyme salt pepper and Dijon mustard
  4. Coat lamb chops generously on both sides pressing herbs firmly
  5. Preheat air fryer to 400°F (200°C) for 3 minutes
  6. Place lamb chops in single layer in air fryer basket
  7. Cook for 6 minutes then flip carefully
  8. Cook another 6 minutes for medium rare
  9. Meanwhile dissolve sugar in hot water for mint sauce
  10. Mix mint leaves vinegar sugar water and salt
  11. Check internal temperature reaches 145°F minimum
  12. Remove and rest for 5 minutes before serving
  13. Serve with mint sauce on the side
