Air Fryer Meatloaf

Ingredients
  

  • - 1 lb ground beef
  • - ½ lb ground pork
  • - ½ cup breadcrumbs
  • - ¼ cup milk
  • - 2 large eggs beaten
  • - 1 small onion finely diced
  • - 3 cloves garlic minced
  • - 2 tbsp Worcestershire sauce
  • - 1 tsp Italian seasoning
  • - 1 tsp garlic powder
  • - ½ tsp salt
  • - ½ tsp black pepper
For glaze:
  • - ¼ cup ketchup
  • - 2 tbsp brown sugar
  • - 1 tbsp Worcestershire sauce
  • - 1 tsp mustard

Method
 

  1. Soak breadcrumbs in milk for 5 minutes to create panade
  2. Combine ground beef and pork in large bowl
  3. Add soaked breadcrumbs eggs onion garlic Worcestershire and all seasonings
  4. Mix gently until just combined — do not overmix
  5. Shape into a loaf that fits your air fryer basket
  6. Preheat air fryer to 360°F (182°C) for 3 minutes
  7. Place meatloaf in air fryer basket
  8. Cook for 20 minutes
  9. Meanwhile mix all glaze ingredients together
  10. At 20 minutes brush glaze generously over top and sides
  11. Cook another 5 minutes until glaze is caramelized
  12. Check internal temperature reaches 160°F
  13. Rest for 5 minutes before slicing and serving
