Preheat air fryer to 400°F (200°C) for 3 minutes
Cut all vegetables into similar sized pieces
Pat vegetables completely dry with paper towels
Toss with olive oil garlic powder paprika Italian seasoning salt and pepper
Place in single layer in air fryer basket
Cook for 10 minutes then shake basket well
Cook another 10 minutes until golden and crispy
Meanwhile whisk all tahini sauce ingredients until smooth
Add water gradually until desired consistency
Assemble bowls with quinoa or rice as base
Top with roasted vegetables
Drizzle generously with tahini sauce
Garnish with fresh herbs and lemon wedges
