Air Fryer Roasted Vegetable Bowl

Ingredients
  

  • - 1 cup broccoli florets
  • - 1 cup cauliflower florets
  • - 1 red bell pepper diced
  • - 1 zucchini sliced
  • - 1 cup cherry tomatoes
  • - 1 red onion sliced
  • - 3 tbsp olive oil
  • - 1 tsp garlic powder
  • - 1 tsp smoked paprika
  • - 1 tsp Italian seasoning
  • - ½ tsp salt
  • - ½ tsp black pepper
  • - 2 cups cooked quinoa or rice for serving
  • For tahini sauce:
  • - 3 tbsp tahini
  • - 2 tbsp lemon juice
  • - 1 clove garlic minced
  • - 2 tbsp water
  • - ½ tsp salt

Method
 

  1. Preheat air fryer to 400°F (200°C) for 3 minutes
  2. Cut all vegetables into similar sized pieces
  3. Pat vegetables completely dry with paper towels
  4. Toss with olive oil garlic powder paprika Italian seasoning salt and pepper
  5. Place in single layer in air fryer basket
  6. Cook for 10 minutes then shake basket well
  7. Cook another 10 minutes until golden and crispy
  8. Meanwhile whisk all tahini sauce ingredients until smooth
  9. Add water gradually until desired consistency
  10. Assemble bowls with quinoa or rice as base
  11. Top with roasted vegetables
  12. Drizzle generously with tahini sauce
  13. Garnish with fresh herbs and lemon wedges
