Air Fryer Shrimp Kabobs

Ingredients
  

  • - 1 lb large shrimp peeled and deveined
  • - 2 bell peppers any color cut into chunks
  • - 1 red onion cut into chunks
  • - Metal or soaked wooden skewers
For honey soy lime marinade:
  • - 2 tbsp soy sauce
  • - 2 tbsp honey
  • - 1 tbsp olive oil
  • - 1 tbsp fresh lime juice
  • - 3 cloves garlic minced
  • - 1 tsp smoked paprika
  • - ½ tsp black pepper

Method
 

  1. Pat shrimp dry with paper towels
  2. Mix soy sauce honey olive oil lime juice garlic paprika and pepper
  3. Toss shrimp and vegetables in marinade for 10 minutes
  4. Preheat air fryer to 400°F for 3 minutes
  5. Thread skewers alternating shrimp pepper and onion
  6. Place skewers in single layer in basket
  7. Cook for 6 minutes then flip
  8. Cook another 5-6 minutes until shrimp curl into C shape
  9. Serve over rice with extra marinade drizzled on top
