Air Fryer Shrimp Tacos

Ingredients
  

  • - 1 lb large shrimp peeled and deveined
  • - 1 tbsp olive oil
  • - 1 tsp garlic powder
  • - 1 tsp smoked paprika
  • - 1 tsp cumin
  • - ½ tsp chili powder
  • - ½ tsp salt
  • - ½ tsp black pepper
  • - 8 small flour or corn tortillas warmed
  • - 1 avocado sliced
  • - 2 cups coleslaw mix
  • - ¼ cup cilantro chopped
  • - 2 limes cut into wedges
  • - Sriracha mayo for drizzling

Method
 

  1. Preheat air fryer to 400°F (200°C) for 3 minutes
  2. Pat shrimp completely dry with paper towels
  3. Toss shrimp with olive oil and all seasonings
  4. Place in single layer in air fryer basket
  5. Cook for 5-6 minutes until pink and slightly charred
  6. Warm tortillas in microwave for 30 seconds
  7. Assemble tacos with shrimp coleslaw and avocado
  8. Top with cilantro and drizzle with sriracha mayo
  9. Serve immediately with fresh lime wedges
