Method
- Preheat air fryer to 400°F (200°C) for 3 minutes
- Slice zucchini into even ¼ inch rounds
- Pat zucchini slices completely dry with paper towels
- Toss with olive oil, garlic powder, Italian seasoning, salt and pepper
- Mix parmesan with seasoned zucchini until evenly coated
- Place in single layer in air fryer basket
- Cook for 5 minutes then flip each slice carefully
- Cook another 5 minutes until golden and crispy
- Transfer to serving plate immediately
- Garnish with fresh parsley and serve with ranch dressing
