Air Fryer Zucchini

Ingredients
  

  • - 3 medium zucchini sliced into ¼ inch rounds
  • - 2 tbsp olive oil
  • - ½ cup grated parmesan cheese
  • - 1 tsp garlic powder
  • - 1 tsp Italian seasoning
  • - ½ tsp salt
  • - ½ tsp black pepper
  • - Fresh parsley for garnish
  • - Ranch dressing for dipping

Method
 

  1. Preheat air fryer to 400°F (200°C) for 3 minutes
  2. Slice zucchini into even ¼ inch rounds
  3. Pat zucchini slices completely dry with paper towels
  4. Toss with olive oil, garlic powder, Italian seasoning, salt and pepper
  5. Mix parmesan with seasoned zucchini until evenly coated
  6. Place in single layer in air fryer basket
  7. Cook for 5 minutes then flip each slice carefully
  8. Cook another 5 minutes until golden and crispy
  9. Transfer to serving plate immediately
  10. Garnish with fresh parsley and serve with ranch dressing
