Air Fryer Zucchini Brownies

Ingredients
  

  • - 1 large zucchini finely grated and squeezed dry
  • - ½ cup cocoa powder Dutch process preferred
  • - 1 cup sugar
  • - ½ cup all purpose flour
  • - ¼ cup butter melted
  • - 2 large eggs
  • - 1 tsp vanilla extract
  • - ½ tsp baking soda
  • - ¼ tsp salt
  • - ½ cup chocolate chips optional
  • - Cooking spray

Method
 

  1. Finely grate zucchini and wrap in clean kitchen towel
  2. Squeeze out as much moisture as possible — repeat twice
  3. Whisk melted butter sugar eggs and vanilla until combined
  4. Add cocoa powder flour baking soda and salt
  5. Fold gently until just combined — do not overmix
  6. Fold in squeezed dry zucchini until evenly distributed
  7. Fold in chocolate chips if using
  8. Preheat air fryer to 325°F (163°C) for 3 minutes
  9. Spray a 7 inch pan with cooking spray
  10. Pour batter into prepared pan and smooth top
  11. Place in air fryer basket
  12. Cook for 14-16 minutes until top is set and crackly
  13. Toothpick should come out with moist crumbs not wet batter
  14. Cool completely in pan before cutting into squares
  15. Cut into 9 equal squares and serve
